What order are the images joined in?

The order you added them: top to bottom when joining vertically, left to right when joining horizontally.

What if the images are different sizes?

Not a problem. They are scaled proportionally to a shared width (vertical) or a shared height (horizontal) so the edges line up.

Do you upload my images anywhere?

No. The whole join runs in your browser; the images never leave your device.
